The Plaza de España de San Javier hosts from Friday 15 to Sunday 17 September a gastronomic event dedicated exclusively to the fish salting that will be inaugurated at 19:00 with the presence of the actor from the Cartagena of Daniel Albaladejo that will receive from the hands of the Mayor of San Javier, José Miguel Luengo and the Minister of Tourism, Culture and Environment, Javier Celdrán the title of "The Most Living Room", as the sponsor of the event.
The gastronomic days "MiMarMenor de Salazón" with which San Javier closes a cultural cycle dedicated to the Encañizados del Mar Menor will have a large space in which in addition to 10 exhibitors, there will be tastings, and a wide and varied program of showcooking with prestigious chefs of the Region that will show different ways of approaching salting in the kitchen.
Tomorrow, Friday, after the opening of the venue, at 7:30 pm David Lopez, of the restaurateur "Local de Ensayo", will show the use of salting in his kitchen, followed by Juan Páez, from the restaurant Los Habaneros will put the accent on the history of salting, and Irene López from the restaurant De Loreto that will show the application of salting in the indoor kitchen.
Saturday morning will be dedicated to the art of breaking a tuna, called "Tuna Snorting" to be made with the collaboration of Ricardo Fuentes and sons Salazones, starting at 12:30 p.m.
, followed by a little history of salting with Fernando Canet and a tuna tuna.
In the afternoon you will be able to see with hands in the mass to Maria Gómez, of the restaurant Magoga;
Sebastián López, the 8 Gastronomic and Cultural Club and José Cremades de La Cangreja and La Palera.
On Sunday morning chef Julio Velandrino de La Taúlla will show how to dress vegetables with salt from the sea before a Great Moraga of sardines with the collaboration of Fish Albaladejo from 13.30.
The seminars are organized by the City Council of San Javier along with the International Chair of the UCAM and the Academy of Gastronomy Region of Murcia, with the collaboration of the Tourism Ministry and sponsors such as the Port Authority of Cartagena, Hidrogea, Ricardo Fuentes and Sons , Pescados Albaladejos, Estrella de Levante and the Regulatory Council of the Denomination of Origin of Jumilla.
