The Minister of Water, Agriculture, Livestock and Fisheries Francisco Jodar took advantage of his visit yesterday to San Javier to meet, along with the mayor of San Javier José Miguel Luengo, a new industrial and business initiative emerged in the municipality and related to livestock.
It is a company of elaboration of ecological cheeses of ewes launched by a family initiative, in the field of El Mirador.
Taking advantage of the milk of a family sheep was what aroused interest in cheese, and after many courses with cheese masters from the north of Spain, and good advice, Cheeses "Ruperto" was launched.
The company currently has a cattle of 3,500 sheep that takes great care in its own facilities, and which supplies exclusively for the production of its cheeses with raw milk and in the traditional way, avoiding displacements and gaining immediacy.
At the moment it is in phase of production and soon the commercialization of the three cheeses, a manchego type of two sizes, a curl and a blue one, that at the moment are being elaborated with success and that will be sold under the name of the Abuelo , Sharpened, and Blue.
Both the councilor Francisco Jódar and the mayor of San Javier José Miguel Luengo congratulated the family "Ruperto" for the initiative and quality of the project, which is innovative in the municipality, and part of a family of agricultural tradition, which also cultivates the pasture that serves as food for the sheep.
